Potato leek soup. Oh so cheap and oh so easy!!!

This is a really simple and really easy recipe. You can basically use as many veggies as you want, feel free to add chicken or other meat too.

You will need:

at least 2 whole leeks (of course you will mostly use the white part)

2-3 potatoes (you can use more or less depending on how thick you want the soup)

1-4 cups chicken broth (you can use any kind of broth, including bullion cubes, I usually use 1 can of broth and add water, the leeks are really flavorful)

About 2-3T butter

salt and pepper to taste

How to make it:

Melt the butter in a large soup pot, you can judge according to how much you plan on making

add chopped leeks and potatoes, along with other veggies you might want to add, celery, carrots, onion, turnips (everything except tomatoes and other soft veg)

Cook until soft and add broth, use at least enough liquid to cover about 1 inch above veggies

Add salt and pepper to taste

Cover and simmer for at least 25 minutes, or until potatoes are soft

Optional: Take some of the soup out and blend, return to pot and stir
